Hot and Cold Mexican 3 Bean Salad Recipe
This substantial Mexican 3 bean salad is a firm favorite in our household, and is a great way to use up cans of staple items you've got sitting in your store cupboard. It's so called because of the cold, crisp raw vegetables which complement the warm beans perfectly.
Preparation Time 10 mins - Cooking Time 20 mins - Serves 4
Ingredients
1 large red pepper (capiscum), diced into small pieces
1 medium red onion, diced into small pieces
1 small red chili, de-seeded and finely chopped
2 large tomatoes, de-seeded and diced into small pieces
2 fresh limes
good handful of fresh coriander, finely chopped
500g long grain white rice
250g can of red kidney beans
175g can of sweetcorn, drained
125g can of butter beans
125g can of cannellini beans
1 teaspoon of cayenne pepper
Method
1. Cook the rice in a pan of boiling water for the time indicated on the packet, usually 20 minutes.
2. While the rice is cooking, chop up the red pepper, red onion, red chili, tomatoes and coriander and place in a bowl.
3. Slice the limes in half and squeeze the juice from them into the vegetable mixture. Add the sweetcorn and cayenne pepper and stir.
4. Approx 7 minutes before the rice is cooked, place the contents of the cans of kidney beans, butter beans and cannellini into a pan and heat through gently for 4-5 minutes, taking care not to allow them to boil.
5. Drain the cooked rice and the warmed beans, and add to the vegetable mixture. Mix thoroughly.
6. Garnish with a few more pieces of coriander and serve immediately.
Variations
If you like your food extra hot, you could also try adding a few chopped green or red jalapenos into the vegetable mixture. And brown rice also works very well with this particular recipe.
Top Tip
Although this Mexican 3 Bean Salad recipe is very quick to make, you can save even more time by using a packet of microwave rice which is usually ready in 2 minutes or so.

In addition, when combined with whole grains such as rice, kidney beans are a virtually fat-free high quality source of protein.
