Apple Salad Recipe with Peaches and Pecans

Apple Salad Recipe

If you're looking for a light and healthy meal, this apple salad recipe is just the ticket. Combine crisp lettuce leaves, creamy cottage cheese and ripe peaches for a taste that's both delicious and easy on your waistline. The orange and honey dressing is the perfect finishing touch and makes this a great refreshing dish to serve on a hot summer's day.

Preparation Time 15 mins - Serves 2

Ingredients

1 large green apple (e.g. Golden Delicious), cored and cut into slices

2 ripe peaches, peeled and chopped into small pieces

350g low fat cottage cheese

Iceberg lettuce leaves, washed and patted dry

10 pecan nuts, halved

For the orange honey dressing

3 tablespoons fresh orange juice

1 tablespoon olive oil

1 teaspoon clear honey

Method (Makes 2 plates)

1. Arrange the lettuce leaves neatly on a plate. Next, arrange the apple slices at different angles around the plate.

2. Add the chopped peaches to the cottage cheese and stir well. Place a generous amount in the centre of the plate. Sprinkle over the chopped pecan nuts.

3. For the orange honey dressing, combine the olive oil, orange juice and honey together in a dish. Drizzle over the lettuce leaves and apple slices and enjoy immediately.

Variations

If you prefer, you can of course use tinned peaches instead of fresh ones in this apple salad recipe. And for a slightly different taste that's equally refreshing, why not try adding some pineapple pieces to the cottage cheese instead of the peaches.

Top Tip

Always make sure you thoroughly pat dry the washed lettuce leaves. If not, the leftover moisture will make them go limpy and the whole salad will have a 'soggy' taste about it.
