Easy Baked Bean Casserole Recipe

Baked Bean Casserole Recipe

You can make this delicious baked bean casserole recipe for a little over $4, and it’s really simple to make too. It also makes a great potluck dish to take round to other peoples' homes. If you’re feeding a larger crowd, simply multiply the quantities and use a bigger casserole dish.

Preparation Time 10 mins – Cooking Time 1 hr 20 mins – Serves 2-3

Ingredients

2 medium baking potatoes, washed and cut into thin slices

1 medium onion, finely chopped

50g grated cheddar cheese

415g can baked beans

290g can Campbell’s Condensed Cream of Tomato Soup

Salt and black pepper

2 teaspoons dried basil

Method

1. Place a layer of sliced potatoes (approx one third of them) in the bottom of a medium-sized casserole dish. Sprinkle over half the chopped onions, then pour over half the can of baked beans. Sprinkle over a little salt and pepper and a teaspoon of the dried basil to season.

2. Repeat step one.

3. Place the last third of the sliced potatoes on the top of the dish and pour over the can of condensed soup. Cover and bake in the oven for 1 hour and 10 minutes at 200 degrees celsius / 400 degrees fahrenheit / gas mark 6.

4. Remove the casserole lid and sprinkle over the grated cheese. Bake uncovered for a further 10 minutes until the cheese has turned golden brown and is bubbling. Serve with thick wedges of buttered bread.

Variations

Try adding in some chopped mushrooms in place of (or as well as) the chopped onions. And to add a spicy twist to this easy baked bean casserole recipe, you could also sprinkle in a little cayenne pepper along with the salt and pepper.

Also, this dish is quite ‘saucy’. If you prefer a ‘tighter’ sauce, just reduce the amount of condensed soup according to your own tastes.

Top Tip

Don’t be tempted to increase the oven temperature so the baked bean casserole cooks more quickly – you’ll find that the potatoes will dry out and lose their tenderness.
