Easy Bean Burrito Recipe

Bean Burrito

I really love burritos and I reckon this easy rice and bean burrito recipe is one of the best burrito recipes out there! Packed full of healthy red kidney beans, filling savory rice and gooey melted Monterey Jack cheese, it makes a mouthwatering Mexican meal the whole family will enjoy!

Preparation Time 10 mins - Cooking Time 25 mins - Makes 4 burritos

Ingredients

1 onion, finely chopped

200g can red kidney beans

200g can sweetcorn

400g packet Mexican flavored savory rice

70g low-fat soft cream cheese (I like to use Kraft 'Philadelphia Light')

50g grated Monterey Jack cheese

4 tablespoons tomato salsa

4 large flour tortillas

Olive oil

Method

1. Add the packet of savory rice to a large saucepan of salted boiling water and cook for the time indicated on the packet, usually 15 - 20 minutes.

2. While the rice is cooking, heat a little olive oil in a pan and fry the chopped onions over a medium-high heat for approximately 5 minutes until they start to brown.

3. Meanwhile in another saucepan heat through the red kidney beans and sweetcorn and drain.

4. Drain the cooked rice and return to the pan. Add in the onions, kidney beans and sweetcorn and mix well.

5. Spread one side of each tortilla with a quarter of the cream cheese. Add a generous helping of the burrito filling, sprinkle over some grated Monterey Jack cheese and fold.

6. Drizzle a tablespoon of tomato salsa over each burrito and enjoy immediately. Serve with a fresh, crisp side salad.

Variations

If you prefer your food a little more spicy, you could try adding a few teaspoons of minced jalapenos to the burrito filling.

And if you can't find Mexican-flavored savory rice in your local supermarket you can use any other flavored savory rice of your choice in this bean burrito recipe.

Top Tip

Always use good quality flour tortillas if you can. The first time I made this recipe I bought the cheapest tortillas in the shop, only to discover later that they tended not to fold over or hold together very well.
