Hot Broccoli Salad With Satay Noodles Recipe

Broccoli Salad

This delicious hot broccoli salad recipe makes a great main meal, and combines crispy nutrient-rich veg with a crunchy peanut satay sauce.

Preparation Time 20 mins - Cooking Time 15 mins - Serves 2

Ingredients

100g broccoli florets

100g cauliflower florets

50g mange tout, trimmed and cut in half

50g baby corn, trimmed and cut in half

1 large carrot, peeled and cut into batons

100g egg noodles

Handful of fresh coriander, finely chopped

Peanut Satay Sauce

35g of toasted unsalted peanuts

1 large green onion, coarsely chopped

1 garlic clove, quartered

1/2 tablespoon light soy sauce

1/4 teaspoon chilli powder

1/4 teaspoon brown sugar

1 teaspoon lemon juice

70ml coconut milk (use a low fat variety to reduce the calorie content)

90ml cold water

Method

1. Steam or boil the broccoli, cauliflower, mange tout, baby corn and carrots until they begin to become tender, approximately 5 minutes. Drain.

2. Next, make the satay sauce by firstly grinding the peanuts in a food processor or with a mortar and pestle until finely crushed. Lay aside.

3. Next, crush the onion and garlic into a coarse paste using a mortar and pestle. Transfer the paste into a medium heat frying pan and cook for 2 minutes, stirring throughout.

4. Once the paste has cooked for 2 minutes, add in the remaining sauce ingredients, bring to the boil and simmer for 3 minutes. Then transfer the crushed nuts into the pan and simmer the mixture for a further 5 minutes.

5. While the satay mixture is simmering, boil the egg noodles in a pan of salted boiling water for the time specified on the packet. Drain.

6. Arrange the noodles on a plate, heap over the cooked vegetables, drizzle generously with the peanut satay sauce, and garnish with the chopped coriander. Serve immediately.

Variations

You can save even more time and money by using frozen vegetables for this recipe in place of fresh ones.

Top Tip

After draining the cooked vegetables, rinse under some cold water and then drain again to prevent them from cooking any further.

This broccoli salad recipe is packed full of goodness as broccoli is an extremely nutritious vegetable, and is particularly high in Vitamins C, K and A.

However, to ensure you get the most health benefits, always steam broccoli where possible as boiling and microwaving can result in a loss of essential nutrients.
