Wholemeal Cheese Scones

Cheese Scones

Delicious, home-made cheese scones in under 30 minutes? Sounds too good to be true?! Not with this easy-to-make wholemeal cheese scones recipe! I love to serve these warm and drizzled with melting butter (my own particular vice!), or why not cut in half and serve with some low-fat cream cheese and a slice of pineapple. They’re also the perfect accompaniment to a large steaming bowl of hearty vegetable soup.

Preparation Time 10 mins – Cooking Time 15 mins – Makes 4-6 scones

Ingredients

115g self-raising wholemeal flour

30g butter

25g grated cheddar cheese

85ml milk

1 tablespoon dried basil

Salt and black pepper

Method

1. Place the flour, a pinch of salt, a generous pinch of black pepper and the dried basil into a large bowl. Add the butter and rub into the flour.

2. Next, sprinkle in two thirds of the grated cheese and stir. Pour in the milk and stir the mixture gently until it forms a soft dough. (If you find the mixture is not forming into a soft dough easily, keep adding a little more milk until it does).

3. Place the dough onto a floured surface and knead gently. Shape into a round approximately 2cm thick. Next, cut out individual scones using a 5cm cutter, re-kneading any leftover pieces until all the dough is used up.

4. Place the scones on a greased baking tray, brush with a little milk and sprinkle the remaining grated cheese over the top of each one. Bake in a preheated oven at 220 degrees celsius / 425 degrees Fahrenheit / gas mark 7 for approximately 10-14 minutes until the scones have risen and turned golden brown. Cool on a wire tray – if you can wait to eat them, that is!

Variations

You can also make these cheese scones using plain self-raising flour instead of wholemeal. And for some extra crunch, why not try sprinkling some sesame seeds into the dough mixture.

Top Tip

Always make sure you use a greased baking tray to cook the scones on. If you don’t, you’ll likely find that the scones will break in half when you try to lift them off and you’ll have to scrape the bottoms off the tray.
