Greek Salad Recipe With Feta Cheese and Olives
This refreshing Greek salad recipe reminds me of many happy summer holidays spent on the beautiful island of Corfu. Simplicity is the key here - the fresh ingredients speak for themselves. Juicy succulent tomatoes, refreshing cucumber and flavorsome olives - pure bliss!
Preparation Time 10 mins - Serves 2
Ingredients
Half a large cucumber, sliced diagonally
2 large firm tomatoes, sliced into thick circles
1 small red onion, sliced into fine rings
10 pitted green olives, sliced into halves
150g Greek feta cheese, cut into small cubes
2 tablespoons of olive oil
2 teaspoons dried basil
Method
1. Arrange the cucumber slices around the edge of a large round plate.
2. Next arrange the sliced tomatoes in a circle, and place the red onion rings on top of the cucumber and tomatoes.
3. Place the feta cheese cubes in the center of the plate and scatter with the sliced olives.
4. Drizzle the olive oil over the salad and sprinkle over the dried basil. Serve with some toasted pita bread and tzatziki dip.
Variations
You can easily substitute the green olives for some pitted black olives if you prefer.
Top Tip
Although this recipe only takes a few minutes to prepare, you can save even more time by buying some feta cheese which has already been cubed and marinated in olive oil. This oil can then also be used as the Greek salad dressing.
