Green Bean Salad With Honey Mustard Potatoes Recipe
This nutrient-packed green bean salad is a unique twist on a traditional recipe, and features a mouthwatering combination of vegetables, honey mustard potatoes and Italian parmesan shavings.
Preparation Time 10 mins - Cooking Time 20 mins - Serves 4
Ingredients
400g new potatoes
200g trimmed fine green beans
200g trimmed mangetout (snow peas)
25g fresh chives, finely chopped
6 trimmed spring onions, finely chopped
30g parmesan shavings
4-5 tablespoons of ready-made honey mustard dressing (e.g. Kraft sell a nice low-fat version)
Pinch of coarse ground black pepper
Method
1. Keeping the skins on, wash the potatoes and cut in half. Add to a pan of boiling salted water and boil for 8 minutes.
2. After the 8 minutes have elapsed, add the green beans and boil for a further 2 minutes.
3. Next add the mange tout and boil the contents of the pan for a further 3 minutes.
4. Once the vegetables have cooked, drain, sprinkle with the black pepper and allow to cool slightly for a few minutes.
5. Once cooled, transfer the cooked vegetables to a large serving dish and stir in the spring onions, chives and parmesan shavings.
6. Drizzle over the honey mustard dressing and serve immediately.
Variations
Try adding a handful of toasted pine nuts for some extra crunch.
Top Tip
To prevent the vegetables from cooking further, rinse them in some cold water after draining from the pan.
