Cheesy Chive Stuffed Potato Recipe

Our cheesy chive stuffed potato recipe is just the ticket if you're starting to get bored of the same old baked potato fillings! Despite the name it's actually a fairly healthy recipe as it uses low-fat cream cheese instead of lots of full-fat hard cheese. It's also wonderfully creamy and just melts in the mouth!

Preparation Time 10 mins - Cooking Time 1 hour for the potatoes to bake - Makes 2 stuffed potatoes

Ingredients

2 large baked potatoes, skins washed and pierced

4 spring onions (scallions), trimmed and chopped into small pieces

4 heaped tablespoons of low-fat chive-flavored soft cream cheese (Kraft 'Philadelphia' do a particularly nice one)

2-3 tablespoons grated white mature cheddar

Fresh chopped chives to garnish

Method

1. Bake the potatoes in a preheated moderate oven for approximately 1 hour or until tender.

2. Once cooked, make a cut in each potato, gently push the sides apart, and carefully scoop out the potato flesh and place in a bowl.

3. To the potato flesh add the chopped spring onions and cream cheese and stir well until thoroughly mixed through.

4. Spoon the potato mixture back into the potato shells and sprinkle over the grated cheese. Place on a baking tray and pop under a hot grill (broiler) for a few minutes until the cheese on top has melted. Garnish with some fresh chopped chives and serve immediately.

Variations

I also sometimes like to substitute the white mature cheddar in this stuffed potato recipe for some grated Emmental - it gives the potatoes a nutty, sweet flavor.

Top Tip

When buying potatoes for this stuffed potato recipe, it's ok to choose ones which have some dirt still on them as this helps to protect them from bruising and exposure to light. Just make sure you wash them thoroughly before cooking!
