Stuffed Potatoes With Chili Avocado

Our mouth-watering recipe for stuffed potatoes with chili avocado and cucumber transforms humble spuds into a gastronomical delight! Gone are the days when a tasty baked potato filling consisted of some baked beans covered in grated cheese... Instead, try this unusual combination and give your tastebuds a real treat!

Preparation Time 10 mins - Cooking Time 1 hour for the potatoes to bake - Makes 2 stuffed potatoes

Ingredients

2 large baked potatoes, skins washed and pierced

2 ripe medium-sized avocados, chopped into small pieces

Half a small cucumber, chopped into small pieces

2 tablespoons Thai chili dipping sauce

2 teaspoons lemon juice

1 teaspoon ground cumin

Fresh coriander leaves to garnish

Method

1. Bake the potatoes in a preheated moderate oven for approximately 1 hour or until tender.

2. Place the chopped avocados, cucumber, chili sauce, lemon juice and ground cumin in a bowl. Stir well.

3. Next, make a deep cut in the top of the baked potato and gently push the sides apart. Spoon in the avocado mixture, garnish with a few fresh coriander leaves and serve immediately.

Variations

It's not my cup of tea, but my boyfriend Jason once added in a few small pieces of chopped green apple to this stuffed potatoes recipe and said it was really nice!

Top Tip

Here's a handy tip for helping you select ripe avocados when shopping. Gently press your thumb into the top of the avocado near the stem - if it gives slightly, this is a sign that it's ready to eat.
