Vegetarian Chili Recipe
This healthy vegetarian chili recipe can be rustled up in no time and is perfect for feeding a large hungry crowd. Simply multiply the quantities as required for a quick, cheap and wholesome Mexican meal that all your amigos will love!
Preparation Time 10 mins - Cooking Time 25 mins - Serves 4
Ingredients
1 large red pepper (capiscum), chopped into small pieces
1 large red onion, chopped into small pieces
1 large courgette (zucchini), chopped into small pieces
1 medium red chilli, de-seeded and finely chopped
3 teaspoons of green jalapenos
Good handful of fresh coriander, finely chopped
400g can baked beans
200g can kidney beans, drained
125g can butter beans, drained
400g can chopped tomatoes
Olive oil
Method
1. Heat a little olive oil in a large saucepan and add the pepper, red onion, courgette and chili. Saute for a few minutes until the vegetables begin to soften a little.
2. Next, add in the baked beans, kidney beans, butter beans, chopped tomatoes, jalapenos and half the fresh coriander. Stir well, bring to the boil, cover, and then simmer over a low heat for 20 minutes until the chili has thickened, stirring occasionally to prevent it from sticking to the bottom of the pan.
3. Ladle into warmed bowls and garnish with the rest of the fresh coriander. Serve with tortilla chips or rice.
Variations
I also like to add a little drop of sour cream and some grated cheddar cheese or Monterey Jack on top of each individual portion.
Top Tip
Of course, you can increase the intensity of this vegetarian chili dish by adding more jalapenos and chilies, or even some chili powder. But it's perhaps a good idea to err on the side of caution to start with and then add in some more heat while the chili is cooking if you prefer it to have a little more kick.
